Latin sources concerning the cooking of the ''viscera'' underline the difference between the Etruscan and Roman customs distinguishing the ''exta aulicocta'' boiled in the ''olla extaris'' before the offering to the god, from the Tuscan ''exta'' roasted ''in veru'' and partly eaten during the sacrificial rite.
