[[Sopa de mondongo]], made with tripe, is common in the Caribbean and throughout Latin America. Gandinga is a hearty stew, well known in Cuba and Puerto Rico, prepared from the heart, liver, kidneys, and oesophagal tissue of either pork (''gandinga de cerdo'') or beef (''gandinga de res'').
